Veggie Quinoa Salad

Looking for a quick, delicious and easy way to get your greens in? Try our yummy quinoa salad!

Time: 20 minutes
- Cook 2 cups pf quinoa according to brand instructions (we use sprouted quinoa)
- While the quinoa is cooking, boil 1 cup green peas and 1 cup of snap peas for 15 seconds, drain and place in a bowl
- In a large bowl, mix the cooked quinoa, 1/4 cup chopped mint, salt and pepper to taste, three tablespoons of olive oil, juice of half a lemon and the cooked peas
Optional: serve with fresh chopped chilis for an extra kick!
