Looking for a way to combine your love of eggs with your love of vegetables? Look no further! This quiche is loaded with the good stuff, aka kale and sweet potato, and makes a wonderful breakfast, lunch or dinner!

Cook time: 1 hour
- Preheat oven to 400 F/ 204 C
- Chop 1 large sweet potato into thin oval slices, drizzle with olive oil and bake in lined/ greased tray for 25 minutes
- While sweet potato is baking, make egg mixture: whisk 1 1/2 cups coconut milk with 5 eggs, 1/2 teaspoon baking powder, salt and pepper to taste, 1 minced garlic clove, 1 cup chopped and sautéed baby kale and 1/4 cup chopped green onions
- In lined or greased pie/ cake pan layer the sweet potato slices for the crust, add egg mixture, sprinkle with 1 tablespoon chopped chives and bake for 30 minutes
